On a busy street in metropolitan Houston, Texas lies Chef Randy Evans’s culinary escape from the big city. Dedicated to rural sensibilities and nature, Haven is a unique Houston restaurant that offers a variety of organic food with inspiration from the city’s many multicultural communities. A large garden cultivated on the property provides the ingredients for several dishes.
But Haven is perhaps best known for its heaping pile of thick-cut wild boar drenched in minced onions, tomatoes, and Creole seasonings. Haven’s wild boar chili remains one of the establishment’s most popular dishes since it opened in 2009. Although the chili has simple roots, many wondered exactly what went into making the meal.

- 3 Tbsp vegetable oil
- 3 cloves garlic, shaved
- 1 cup finely diced yellow onion
- 2 Lb. Wild boar, ¼”-½” cubes
- ¼ cup Creole Meat Seasoning
- 2 Tbsp. Chili powder
- ¾ Tbsp. Cumin
- ¼ cup tomato paste
- 2 cups diced tomato, skinned & seeded
- 2½ cups water
- 3 Tbsp. Maseca (corn flour)
- 2 Tbsp. Water
- ½ cup crème fraiche
- 1 cup shredded pepper jack cheese
- 2 Tbsp. Minced onions and cilantro
