Better-Than-Fried Snapper Recipe

This delicious, heart-healthy recipe that’s easy to prepare features snapper fillets that taste fried but don’t have the added calories. Although you’ve probably got some fillets in your freezer from red snapper season back in the summer or perhaps you’ve caught gray snapper this fall and winter, this dish works well with most any kind of snapper.

Ingredients:

  • 2 large egg whites
  • 3/4-cup plain dried bread crumbs (may need to adjust this amount; also Panko crumbs work well, Italian bread crumbs, etc.)
  • 4 snapper fillets, about 4-ounces each
  • 1/4-teaspoon salt
  • 1/4-teaspoon pepper
  • Juice of 1 lemon

Preparation:

In a pie plate, whisk the two large egg whites with a fork just until frothy. Place bread crumbs on waxed paper. Squeeze lemon juice over the red snapper fillets, and sprinkle the fillets with salt and pepper. Dip each fillet into egg whites, and then coat with bread crumbs. Arrange on baking sheet coated with nonstick spray. Broil 3 to 4 minutes or until golden brown, turning over once.
