Country rapper SMO shares with us his recipe for a SMOlicious dish, Chicken Veggi Heaven. SMO talks his life-altering quadruple bypass, slimming down, and his healthier lifestyle on a new episode of the web series Heartlandia. Plus, he shows us he is still his badass self shooting guns and making music. Watch him cook up a wholesome country meal in the video below, then try out this tasty recipe for dinner.
Chicken Veggi Heaven
•Zucchinis – 4
•Sweet mini peppers-sliced using approx 5 peppers (1 cup)
•Baby Bella mushrooms-sliced whole container (8 ozs.)
•Broccoli – 2 crowns chopped (2 cups)
•Asparagus – 1 cup of tips
•Basil pesto – 10 ozs.
•Reduced fat alfredo sauce – 8 ozs.
•Roasted tomato bruschetta – 1LB
•Kentucky bourbon bellavitano cheese – 1 cup grated
•1 LB Sriracha chicken sausage sliced
•1 LB spinach feta chicken sausage sliced
•2 tsps. of coconut oil
In a wok, with 1 tsp of coconut oil on medium-high heat, (cook in layers) add noodles, broccoli, asparagus, mushrooms, and peppers last. Top with basil pesto. Allow to cook for five minutes before stirring then cook the mixture to preferred tenderness. Allow vegetable blend to simmer until the meat is cooked thoroughly. In another wok, add 1 tsp of coconut oil on medium-high heat. Add chicken sausages and bruschetta tomatoes. Turn sausage slices until cooked thoroughly. Add 8 ozs of reduced fat alfredo. Strain vegetables and combine with chicken mixture. Mix. Add grated cheese.
Serves 10-12 people.
