Wild Game Cooking Stage Highlights Wild Recipes at Pheasant Fest

Kansas City, MO– The only thing as fun as hunting wild game is enjoying the meals that follow. Pheasants Forever spices up its National Pheasant Fest & Quail Classic event this year with the Wild Game Cooking Stage, featuring wild game chef Hank Shaw. National Pheasant Fest & Quail Classic 2012 comes to the Kansas City Convention Center, Bartle Hall in Kansas City, Mo, February 17, 18 & 19th.
National Pheasant Fest & Quail Classic’s Wild Game Cooking Stage is an entire section of the show floor devoted to the hunt for wild game culinary success.
Free with paid admission to the show, the Wild Game Cooking Stage will offer:
- Cooking seminars featuring instruction
- Preparation of big and small game
- Recipes for meals and appetizers
- Healthy eating game and snack recipes
Featured chef Hank Shaw will present all three days at the Wild Game Cooking Stage. One of the most well-known chefs in the outdoor community, Hank Shaw is an award winning journalist turned hunter-forager. His book “Hunt, Gather, Cook: Finding the Forgotten Feast,” highlights this transition as well as illustrates a host of wild game recipes. During the event Hank will be on stage speaking on the following:
- Getting the most out of pheasants and quail (stock, tips on cooking legs, wings, giblets, etc)
- Plucking, hanging and processing upland game birds
- Outdoor cooking for upland game birds (BBQ and grilling)

A few of the other tasty treats being showcased will include Venison Tequila Chili and Country Fried Bison Steak by Chef Mark Alan, Pheasant Dijon and Grilled Bacon Wrapped Venison Backstrap by Shannon Kimball of Kansas City Food Artisans, as well as Pheasant Nuggets with Louie Sauce, Double Pheasant Chowder and Pan Seared Quail with Grape Port Red Reduction Sauce in Mushroom Risotto by Chef Patrick Boutier of Cheyenne Ridge Lodge.
