Hunt Chef Prepares a Bacon Wrapped & Smoked Coyote Dinner

For those of you who said they would try a taste of coyote backstrap, wrap your taste buds around this coyote dinner . . .

After taking one bite of coyote meat, Hunt Chef said he knew exactly what he was going to do next, so, voila:

Chef prepared a very special bacon wrapped & smoked coyote hind leg, starring some buttermilk whipped potatoes on the side, and delicious sauteed apples. With a little Tarheel Mustard BBQ sauce to go with, it would be hard to turn that down!

Again, he says the meat was “in NO way gamey, musky or strong in flavor.”
